Instructions
- Preheat your oven to 375°F (190°C). Sift together the flour, baking soda, and baking powder in a medium bowl.
- Cream the softened butter and sugar until smooth. Beat in the egg, vanilla, and almond extracts. Gradually mix in the dry ingredients.
- Roll rounded teaspoons of dough into balls, flatten with a glass, and dust with powdered sugar. Bake for 8-10 minutes until edges are lightly golden and cool on wire racks.
- Spread buttercream frosting on the flat side of one cookie, top with another cookie to form a sandwich, and dust with additional powdered sugar before serving.
