Ingredients

- 1 cup fresh peaches, diced
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 package refrigerated pie crusts
- 1 egg, beaten (for egg wash)
- Oil for frying
Instructions
- In a bowl, combine diced peaches, sugar, lemon juice, and cinnamon. Stir until well-coated and set aside.
- Roll out the refrigerated pie crusts on a lightly floured surface and cut into circles, about 4 inches in diameter.
- Place a spoonful of the peach filling in the center of each circle.
- Fold the crust over to create a half-moon shape and seal the edges with a fork.
- Heat oil in a frying pan over medium heat until shimmering.
- Carefully add the hand pies to the hot oil, frying until golden brown, about 2-3 minutes per side.
- Remove and let them drain on paper towels. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to two months.
