Description

A light and fluffy dessert bursting with the natural sweetness of ripe plums, complemented by almond flour.


Ingredients

Scale
  • 200g self-raising flour
  • 100g almond flour
  • 150g caster sugar
  • 150g unsalted butter, softened
  • 3 large eggs
  • 100g Greek yogurt
  • 1 tsp vanilla extract
  • 6 plums, pitted and sliced
  • 50g flaked almonds
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a traybake tin.
  2. Cream the softened butter and caster sugar together until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the Greek yogurt and vanilla extract.
  4. Gradually fold in the self-raising flour, almond flour, and a pinch of salt.
  5. Pour the batter into the prepared tin, spreading it evenly.
  6. Arrange sliced plums on top and sprinkle with flaked almonds.
  7. Bake for 25-30 minutes, or until a skewer comes out clean.
  8. Cool in the tin before transferring to a wire rack and slicing.

Notes

Can be served warm or at room temperature, pairs well with whipped cream or ice cream.
