Ingredients

  • 2 grilled chicken breasts
  • 2 ripe peaches, sliced
  • 4 cups mixed greens
  • 1 ball of burrata cheese
  • 1/4 cup prosciutto, sliced
  • 1/4 cup walnuts, toasted
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Start by grilling the chicken breasts until fully cooked, about 6-7 minutes per side. Once done, remove them from the grill and let them rest for a few minutes before slicing.
  2. In a large salad bowl, combine the mixed greens, sliced peaches, and prosciutto. Toss them gently to combine flavors.
  3. Arrange the sliced grilled chicken on top of the mixed greens and peach combination.
  4. Tear the burrata cheese into small pieces and place them over the salad. Add the toasted walnuts, drizzle with balsamic glaze, and season with salt and pepper. Finish off with a drizzle of olive oil before serving and toss gently to combine.
