- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup corn (fresh or frozen)
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- In a large pot, sauté onion and garlic until soft, about 3-5 minutes.
- Add the shredded chicken, white beans, diced green chiles, chicken broth, cumin, chili powder, salt, and pepper to the pot. Stir well to combine.
- Bring the mixture to a boil, then lower the heat and let it simmer for about 20 minutes.
- Stir in the corn and sour cream, cooking until heated through, about 5 more minutes. Serve immediately, garnished with chopped cilantro.
Notes
For added depth of flavor, roast the garlic and onion before adding them to the pot. Use rotisserie chicken to save time.
