- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup grated nutritional yeast
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying or baking)
Instructions
- Preheat the oven to 375°F (190°C) if you prefer to bake the meatballs.
- Combine the cooked lentils, breadcrumbs, nutritional yeast, chopped parsley, minced garlic, onion powder, Italian seasoning, and a sprinkle of salt and pepper in a mixing bowl.
- Mix the ingredients until well combined. Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Heat olive oil in a skillet over medium heat and cook the meatballs until golden brown on all sides, or bake for 25-30 minutes, flipping halfway through.
- Serve your delicious vegan meatballs with your favorite sauce or over pasta for a comforting meal.
