- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, chopped
- 3 potatoes, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- Fresh herbs (such as thyme and rosemary)
Instructions
- Preheat your oven to 325°F (163°C). Season the chuck roast generously with salt and black pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until golden-brown.
- Remove the roast and sauté the chopped onion, carrots, and potatoes for a few minutes.
- Add minced garlic and cook for an additional minute. Return the roast, pour in beef broth and Worcestershire sauce, and bring to a simmer.
- Cover the pot and transfer to the oven. Cook for 3-4 hours until fork-tender.
- Let the roast rest for a few minutes before slicing. Serve with the cooked vegetables and sauce.
Notes
