- 1 lb ground turkey
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil
- Optional toppings: cilantro, sour cream, cheese
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and soft, about 3-4 minutes.
- Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned all over, about 5-7 minutes.
- Sprinkle the cumin and chili powder over the turkey. Stir and cook for an additional minute to enhance the flavors.
- Pour in the diced tomatoes, white beans, and chicken broth. Bring to a boil, then reduce heat and simmer for 20-30 minutes to thicken and enhance the flavors. Season with salt and pepper to taste.
Notes
For added flavor, roast the vegetables before adding them to the pot. Adjust spices based on heat preference.
