- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 medium zucchinis, spiralized
- 1 cup pesto (store-bought or homemade)
- Olive oil for cooking
Instructions
- Begin by preheating your skillet with a drizzle of olive oil over medium heat.
- In a medium bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Use your hands or a spatula to mix everything together until just combined.
- Form the mixture into meatballs, approximately 1 to 1.5 inches in size. Add the meatballs to the heated skillet and cook for about 10-12 minutes, turning them occasionally to ensure even cooking.
- While the meatballs are cooking, take another skillet and add a little more olive oil. Sauté the spiralized zucchini for about 2-3 minutes until they are tender yet still a bit crunchy.
- Once done, mix the zucchini with the pesto, stirring well to coat the noodles evenly.
Notes
Garnish with additional Parmesan cheese or red pepper flakes for added flavor.
