Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 medium zucchinis, spiralized
  • 1 cup pesto (store-bought or homemade)
  • Olive oil for cooking

Instructions

  1. Begin by preheating your skillet with a drizzle of olive oil over medium heat.
  2. In a medium bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Use your hands or a spatula to mix everything together until just combined.
  3. Form the mixture into meatballs, approximately 1 to 1.5 inches in size. Add the meatballs to the heated skillet and cook for about 10-12 minutes, turning them occasionally to ensure even cooking.
  4. While the meatballs are cooking, take another skillet and add a little more olive oil. Sauté the spiralized zucchini for about 2-3 minutes until they are tender yet still a bit crunchy.
  5. Once done, mix the zucchini with the pesto, stirring well to coat the noodles evenly.
