- 1 cup shredded purple cabbage
- 1 cup grated carrots
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- 1/4 cup green onions, sliced
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the green cabbage, purple cabbage, shredded carrots, dried cranberries, and sliced almonds. Toss gently.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the cabbage mixture and toss to combine thoroughly.
- Stir in the sliced green onions and refrigerate for at least 30 minutes before serving.
Notes
For extra crunch, toast the sliced almonds before adding them to the slaw. You can replace mayonnaise with Greek yogurt for a healthier alternative.
