- 1 lb chicken breast, cut into bite-sized pieces
- 2 tablespoons yellow curry paste
- 1 can coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- Wooden skewers, soaked in water
- Fresh cilantro, for garnish
Instructions
- Soak wooden skewers in water for at least 30 minutes.
- In a large bowl, mix yellow curry paste, coconut milk, soy sauce, fish sauce, brown sugar, and lime juice to create a marinade.
- Add chicken pieces to the marinade, coat thoroughly, and let marinate for at least 30 minutes.
- Preheat grill to medium-high heat, thread marinated chicken onto skewers, and grill for about 10-12 minutes, turning occasionally.
- Remove from grill, garnish with cilantro, and serve immediately.
Notes
These skewers can be served with jasmine rice or salad. Perfect for parties and can be stored for up to 3 days in the refrigerator.
