Delicious and easy-to-make grilled skewers featuring marinated tofu, fresh vegetables, and juicy pineapple, perfect for summer barbecues or quick weeknight dinners.

- 1 block firm tofu
- 1/4 cup teriyaki sauce
- 1 tablespoon olive oil
- 1 bell pepper, chopped
- 1 onion, cut into chunks
- 1 cup pineapple chunks
- Skewers (wooden or metal)
Instructions
- Start by draining and pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15 minutes. After pressing, cut the tofu into bite-sized cubes.
- In a mixing bowl, combine the tofu cubes with the teriyaki sauce. Make sure each cube is well-coated in the sauce. Allow the tofu to marinate for at least 30 minutes.
- Preheat your grill to medium-high heat. While the grill is heating, thread the marinated tofu cubes, bell pepper chunks, onion pieces, and pineapple onto the skewers. Brush them gently with olive oil to prevent sticking.
- Grill the skewers for about 10-12 minutes, turning occasionally. Look for a nice char on the vegetables and a golden color on the tofu. Remove them from the grill and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
