Description

A comforting blend of tender beef, hearty vegetables, and fluffy dumplings, perfect for chilly evenings and family gatherings.


Ingredients

  • 2 lbs beef chuck, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt (for dumplings)
  • 1/2 cup milk
  • 1/4 cup melted butter

Instructions

  1. In a large pot, brown the beef over medium heat and remove from the pot.
  2. Add onion and garlic to the pot, sauté until soft.
  3. Add carrots, potatoes, and return the beef. Stir in broth, tomato paste, thyme, and bay leaf. Season with salt and pepper. Bring to boil, reduce heat, and simmer for 1.5 to 2 hours.
  4. For dumplings, mix flour, baking powder, and salt in one bowl. In another bowl, combine milk and melted butter. Mix wet ingredients with dry until a batter forms.
  5. Drop spoonfuls of dumpling batter on top of the stew during the last 15 minutes of cooking. Cover and cook until dumplings are fluffy and cooked through.

Notes

For added flavor, consider adding a splash of red wine to the stew. Store leftovers in an airtight container for up to 3 days.
