Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 2 cups tortilla chips
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 2 cups diced tomatoes
- 1/2 cup sliced green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the beef, stirring well. Simmer for 5 minutes.
- In a greased 9×13-inch baking dish, layer half of the tortilla chips, followed by half of the beef mixture, black beans, corn, salsa, diced tomatoes, and cheese.
- Repeat the layering with remaining ingredients finishing with a layer of cheese on top.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Sprinkle sliced green onions on top before serving.
Notes
Can be made ahead and stored in the refrigerator, just add extra baking time if refrigerated before cooking.
