Instructions
- Peel and cube the sweet potatoes. Boil or steam them until tender, about 15-20 minutes. Once cooked, drain and let them cool completely.
- In a large bowl, combine the cooled sweet potatoes, red onion, celery, bell pepper, raisins, and nuts. Gently toss the ingredients together to ensure even distribution.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Pour the dressing over the sweet potato mixture. Toss gently to combine, ensuring everything is well coated. Serve chilled or at room temperature, garnished with fresh parsley.
