Description

A quick and easy sugar-free chocolate pudding that satisfies your chocolate cravings without the added sugar.

Ingredients

Scale
  • 2 cups unsweetened almond milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar substitute (e.g., stevia or erythritol)
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a medium saucepan, whisk together the cocoa powder, sugar substitute, cornstarch, and a pinch of salt until well combined.
  2. Gradually add the almond milk to the dry ingredients while whisking continuously.
  3. Place the saucepan over medium heat and continuously stir until the mixture starts to bubble and thickens, about 5 to 7 minutes.
  4. Remove from heat and stir in the vanilla extract. Pour into serving bowls and refrigerate until set, about 2 to 3 hours.

Notes

Store any leftover pudding in an airtight container in the refrigerator for 3 to 4 days. Adjust sweetness level according to your taste.
