- 1/4 cup unsweetened cocoa powder
- 1/4 cup sugar substitute (e.g., stevia or erythritol)
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a medium saucepan, whisk together the cocoa powder, sugar substitute, cornstarch, and a pinch of salt until well combined.
- Gradually add the almond milk to the dry ingredients while whisking continuously.
- Place the saucepan over medium heat and continuously stir until the mixture starts to bubble and thickens, about 5 to 7 minutes.
- Remove from heat and stir in the vanilla extract. Pour into serving bowls and refrigerate until set, about 2 to 3 hours.
Notes
Store any leftover pudding in an airtight container in the refrigerator for 3 to 4 days. Adjust sweetness level according to your taste.
