Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the creamed mixture, stirring until combined. Press the dough into the greased muffin tin.
- Bake for 10-12 minutes until golden brown, then cool completely in the tin.
- For the frosting, blend powdered sugar, milk, and vanilla extract until smooth. Frost the cooled cookie cups generously.
