Description

Delightful tarts featuring a crisp shell filled with creamy yogurt panna cotta and topped with fresh strawberries.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tablespoons cold water
  • 1 cup Greek yogurt
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 tablespoon gelatin
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix together the all-purpose flour, powdered sugar, and salt. Cut the cold, cubed butter into this mixture until it resembles coarse crumbs. Stir in the egg yolk and cold water until a dough begins to form.
  2. Roll out the dough on a lightly floured surface to about 1/8-inch thickness. Carefully fit the rolled dough into tart pans, pressing gently against the edges. Bake for 15-20 minutes until the tarts are golden brown. Once baked, remove them from the oven and let them cool completely.
  3. In a saucepan, heat the heavy cream and sugar over medium heat until the sugar has dissolved. In a separate bowl, dissolve the gelatin in a bit of warm water. Once dissolved, combine the gelatin mixture with the warm cream, stirring until well blended. Remove from heat, and mix in Greek yogurt and vanilla extract until smooth.
  4. Pour the yogurt mixture into the cooled tart shells, filling them evenly. Refrigerate the tarts for about 4 hours, or until the panna cotta is fully set.
  5. Before serving, top each tart with fresh, sliced strawberries, arranging them beautifully for an eye-catching presentation.

Notes

These tarts are best served chilled. Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
