Ingredients

- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Colored hard candies (for the stained glass effect)
Instructions
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another bowl, cream the butter and sugar together until light and fluffy. Beat in the egg, vanilla, and almond extracts.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C). Roll out the dough to about 1/4 inch thick on a floured surface.
- Use cookie cutters to cut out shapes, cutting smaller shapes from the center for the stained glass effect.
- Crush the colored hard candies and fill the cut-out areas with the crushed candies.
- Place cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Store cookies in an airtight container for up to a week. Freeze for longer storage.
