Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 2 cups spinach
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a boil. Add the shredded chicken, gnocchi, spinach, and dried thyme.
- Reduce heat and let it simmer for about 5-7 minutes or until the gnocchi is tender. Season with salt and pepper.
- Serve hot, topped with freshly grated Parmesan cheese.
Notes
Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm it on the stove over low heat.
