Description

A light yet hearty soup featuring tender chicken, pillowy gnocchi, and vibrant vegetables in a flavorful broth.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 2 cups spinach
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring to a boil. Add the shredded chicken, gnocchi, spinach, and dried thyme.
  5. Reduce heat and let it simmer for about 5-7 minutes or until the gnocchi is tender. Season with salt and pepper.
  6. Serve hot, topped with freshly grated Parmesan cheese.

Notes

Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm it on the stove over low heat.
