  • 2 cups butternut squash, cubed
  • 1 cup cream or milk
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon nutmeg
  • 1 tablespoon olive oil
  • 1 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté onion and garlic until softened.
  3. Add butternut squash and cook until slightly tender. Stir in spinach and cook until wilted.
  4. In a large bowl, combine the cooked vegetables with cream, cheese, salt, pepper, and nutmeg. Mix well.
