- 1 cup shredded carrots
- 1 cucumber, sliced
- 2 green onions, thinly sliced

Instructions
- Step 1: Cook the Rice: Prepare your rice according to the package instructions. If you are using a rice cooker, start this first so the rice is fluffy and ready by the time the beef is finished. You can use white jasmine rice, basmati, or brown rice for extra fiber.
- Step 2: Brown the Beef: In a large skillet over medium-high heat, add the ground beef. Cook the meat until it is completely browned, breaking it into small crumbles with a wooden spoon or spatula. Drain any excess grease from the pan to keep the meal light.
- Step 3: Add Aromatics: Stir in the minced garlic and grated ginger. Cook for about 1 to 2 minutes until you can smell the delicious aroma. Be careful not to burn the garlic, as it can turn bitter quickly.
- Step 4: Season and Simmer: Pour in the soy sauce, brown sugar, sesame oil, and red pepper flakes. Stir well to coat the beef evenly. Let the mixture simmer for 2 to 3 minutes. The sauce will slightly thicken and the flavors will meld together beautifully.
