A quick and delicious meal prep option featuring savory ground beef, gochujang, fresh vegetables, and fluffy rice.
Ingredients
Scale
- 1 lb ground beef
- 1 tablespoon gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced

Instructions
- In a skillet over medium heat, add the ground beef and cook until browned. Make sure to crumble the beef as you cook, ensuring it cooks evenly. Once browned, drain any excess fat.
- Stir in the gochujang, soy sauce, sesame oil, minced garlic, and minced ginger. Cook for an additional 2-3 minutes, until fragrant and slightly thickened.
- In meal prep containers, layer the cooked rice first, then add the beef mixture on top, followed by broccoli florets and julienned carrots.
- Garnish with freshly chopped green onions and a sprinkle of sesame seeds. Allow to cool before sealing and refrigerating.
Notes
Use lean ground beef to reduce fat content. Feel free to substitute with ground turkey or chicken. Experiment with different vegetables for added flavor and nutrition.
