- 1 pound chorizo sausage
- 1 can (15 ounces) pumpkin puree
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup heavy cream (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, cook the chorizo over medium heat until browned.
- Add the chopped onion and minced garlic, cooking until the onion is soft and translucent, about 5 minutes.
- Stir in the pumpkin puree, chicken broth, chili powder, cumin, salt, and pepper until well combined.
- Bring to a simmer and cook for about 15-20 minutes, stirring occasionally.
- If desired, stir in the heavy cream for a richer texture.
- Serve hot, garnished with fresh cilantro.
Notes
Adjust spice level by using mild or hot chorizo. For vegetarian, substitute chorizo with tempeh or plant-based sausage and use vegetable broth.
