Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup apple cider
  • 3 eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. Beat the softened cream cheese and sugar together until creamy and smooth.
  4. Add the apple cider, eggs, ground cinnamon, ground nutmeg, and vanilla extract to the cream cheese mixture. Beat until smooth.
  5. Pour the cheesecake filling over the prepared crust and bake for about 50-60 minutes, or until the center is set but slightly jiggles.
  6. Allow the cheesecake to cool at room temperature for 30 minutes, then refrigerate for at least 4 hours before serving.

Notes

Serve chilled with whipped cream and a sprinkle of cinnamon. Store leftovers in an airtight container in the refrigerator for 5-7 days.
