A deliciously easy breakfast or brunch combining fluffy eggs with smoky salmon and fresh dill.

- 4 eggs
- 1 tablespoon milk
- Salt and pepper to taste
- 1 tablespoon butter
- 4 ounces smoked salmon, sliced
- 1 tablespoon fresh dill, chopped
- Cream cheese (optional for spreading)
Instructions
- Whisk together the eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat and melt the butter evenly.
- Pour the egg mixture into the skillet, tilting to coat the bottom evenly. Cook for 2-3 minutes until edges set.
- Add the smoked salmon and dill on one half of the omelet, then roll over the filling and slide onto a plate.
Notes
Serve warm, garnished with additional dill. Pair with mixed greens or whole grain toast.
