Description

A deliciously easy breakfast or brunch combining fluffy eggs with smoky salmon and fresh dill.


Ingredients

  • 4 eggs
  • 1 tablespoon milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 4 ounces smoked salmon, sliced
  • 1 tablespoon fresh dill, chopped
  • Cream cheese (optional for spreading)

Instructions

  1. Whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and melt the butter evenly.
  3. Pour the egg mixture into the skillet, tilting to coat the bottom evenly. Cook for 2-3 minutes until edges set.
  4. Add the smoked salmon and dill on one half of the omelet, then roll over the filling and slide onto a plate.

Notes

Serve warm, garnished with additional dill. Pair with mixed greens or whole grain toast.
