- 1 pound large shrimp, peeled and deveined
- 4 medium zucchini, spiralized into zoodles
- 4 garlic cloves, minced
- 1/4 cup chicken broth
- 1/4 cup white wine
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- Chopped parsley for garnish
- Lemon wedges for serving
Instructions
- Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
- Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes until pink and opaque.
- Pour in chicken broth and white wine, stirring to combine, and allow to simmer for 2-3 minutes.
- Add spiralized zucchini to the skillet, toss gently, and cook for another 2-3 minutes until tender yet slightly crunchy. Garnish with parsley and serve hot with lemon wedges.
Notes
Use fresh shrimp for the best flavor. You can substitute zucchini with other vegetables.
