Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 medium zucchini, spiralized into zoodles
  • 4 garlic cloves, minced
  • 1/4 cup chicken broth
  • 1/4 cup white wine
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
  2. Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes until pink and opaque.
  3. Pour in chicken broth and white wine, stirring to combine, and allow to simmer for 2-3 minutes.
  4. Add spiralized zucchini to the skillet, toss gently, and cook for another 2-3 minutes until tender yet slightly crunchy. Garnish with parsley and serve hot with lemon wedges.

Notes

Use fresh shrimp for the best flavor. You can substitute zucchini with other vegetables.
