- 1 lb shrimp, peeled and deveined
- 1 lb lobster meat, cooked
- 1 cup frozen peas
- 1 cup diced carrots
- 1 cup corn kernels
- 1/2 cup butter
- 1 cup diced onions
- 1/4 cup all-purpose flour
- 2 cups seafood stock
- 1 cup heavy cream
- 1 tbsp Old Bay seasoning
- Salt and pepper to taste
- 5 refrigerated biscuits
Instructions
- Preheat oven to 400°F (200°C).
- Melt butter in a large skillet over medium heat. Add onions and sauté until translucent.
- Stir in flour and cook for 1 minute. Gradually add seafood stock and heavy cream, whisking until smooth.
- Add shrimp, lobster, peas, carrots, corn, Old Bay seasoning, salt, and pepper. Cook until shrimp are pink, about 5-7 minutes.
- Pour seafood mixture into a baking dish, ensuring even distribution.
- Arrange biscuits on top of the mixture.
- Bake in preheated oven for 20-25 minutes or until biscuits are golden brown.
- Let pot pie cool slightly before serving.
Notes
Use fresh seafood for the best flavor. Substitute lobster with crab meat if desired. For a lighter version, use half-and-half instead of heavy cream.
