Description

A delightful twist on the classic Caesar salad featuring roasted chicken, crisp romaine, cherry tomatoes, crunchy croutons, and rich Caesar dressing, all made in one pan.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup croutons
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the chicken breasts on a sheet pan, drizzle with olive oil, and season generously with salt and pepper.
  3. Roast the chicken in the preheated oven for about 20-25 minutes or until cooked through (internal temperature should reach 165°F).
  4. Let the chicken rest for a few minutes, then slice it into strips.
  5. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, and croutons.
  6. Add the sliced chicken on top, drizzle with Caesar dressing, and toss until well-coated.
  7. Sprinkle grated Parmesan cheese before serving.

Notes

Allow the chicken to rest before slicing to keep it juicy. Customizable with additional toppings such as red onions or avocado.
