A delightful breakfast galette featuring egg whites, crispy turkey bacon, and fresh spinach wrapped in a crispy galette crust.

- 4 Egg whites
- 4 slices Turkey bacon
- 1 Flatbread or pastry dough
- 1 cup Spinach
- Cheese (optional)
- Salt
- Pepper
- 1 tbsp Olive oil
Instructions
- Preheat the oven to 375°F (190°C). Cook the turkey bacon in a skillet over medium heat until crispy, then remove and set aside.
- Add the spinach to the same skillet and sauté until it wilts, about a couple of minutes.
- Whisk the egg whites in a bowl, seasoning with salt and pepper. Add in the sautéed spinach and crumbled turkey bacon, mixing everything well.
- Roll out the flatbread or pastry dough on a baking sheet. Pour the egg mixture onto the prepared dough, leaving a border around the edges for folding.
- Fold the edges of the dough over the filling to create a rustic galette shape. Optionally, sprinkle cheese on top and drizzle with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until the egg is set and the crust is golden brown.
- Let cool slightly before slicing and serve warm.
Notes
Fresh spinach and quality turkey bacon enhance flavor. Use whole eggs for richer taste but increase calories. Can be made ahead. Freeze uncooked galette for up to 2 months.
