- 1 lb sausage (Italian or your choice)
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: green onions or parsley for garnish
Instructions
- In a large pot, cook the sausage over medium heat until browned, about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot and sauté until fragrant and translucent, about 3-4 minutes.
- Stir in the diced potatoes and chicken broth. Increase heat to bring to a boil, then reduce heat and simmer for about 15-20 minutes until potatoes are tender.
- Stir in the heavy cream and season with salt and pepper. Simmer for an additional 5-10 minutes and serve hot, garnished with green onions or parsley if desired.
