- 1 pound Italian sausage
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 cups uncooked lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
- Salt and pepper to taste
Instructions
- In a large pot, cook the sausage over medium heat until browned. Break it apart with a spoon to ensure it cooks evenly.
- Add the chopped onion and minced garlic to the pot. Sauté until softened, about 3-4 minutes.
- Stir in the crushed tomatoes and chicken broth. Bring the mixture to a boil.
- Add the dried basil, oregano, and broken lasagna noodles. Cook until the pasta is al dente, about 10-12 minutes.
- In a separate bowl, mix the ricotta cheese with salt and pepper to taste.
- Serve the soup in bowls, adding a scoop of ricotta on top. Finish with shredded mozzarella, grated Parmesan, and garnish with fresh basil.
Notes
For a lighter option, you can use turkey sausage. Feel free to add vegetables like spinach or zucchini for extra nutrition.
