Instructions
- Rinse the quinoa under cold water. In a pot, combine the quinoa and water; bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork once done.
- Preheat the grill or a skillet over medium heat. Rub the salmon fillets with olive oil, garlic powder, salt, and pepper, ensuring an even coating for flavor.
- Cook the salmon for about 5-6 minutes on each side, or until fully cooked. The salmon should flake easily with a fork when done.
- Layer the cooked quinoa in a bowl, then top with the grilled salmon, halved cherry tomatoes, avocado slices, and fresh spinach or arugula.
- Serve with lemon wedges on the side for a zesty finish.
