Description

Creamy and nutritious, Salmon Quinoa Bowls are a delightful meal bursting with flavor and health benefits. This dish combines tender salmon, fluffy quinoa, and fresh vegetables, making it perfect for a wholesome lunch or dinner.


Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 2 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup spinach
  • Lemon wedges for serving

Instructions

  1. Rinse the quinoa under cold water to get rid of its natural coating, which can taste bitter.
  2. Cook the quinoa by combining the rinsed quinoa and 2 cups of water or vegetable broth in a pot. Bring this mixture to a boil, then reduce the heat to a simmer, cover, and cook for about 15 minutes or until all the liquid is absorbed.
  3. Cook the salmon by heating 1 tablespoon of olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper and cook for about 4-6 minutes on each side until it flakes easily with a fork.
  4. Fluff the quinoa with a fork. To assemble the bowls, divide the quinoa into two bowls, top with the flaked salmon, halved cherry tomatoes, sliced avocado, and fresh spinach.
  5. Serve your beautiful bowls with lemon wedges on the side for an extra splash of brightness.
