Ingredients

  • 1 cup granulated sugar

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup crushed speculoos cookies

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, salt, and cinnamon. Gradually add to the wet mixture, mixing until just combined.
  4. Fold in the chopped rhubarb and crushed speculoos cookies.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
