Ingredients

- 1 cup red lentils
- 3 cups water
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt to taste
- Paprika for garnish
- Fresh parsley for garnish
Instructions
- Rinse red lentils under cold water. In a saucepan, combine lentils and water and bring to a boil. Reduce heat and simmer for about 15 minutes or until lentils are soft.
- Drain any excess water and let the lentils cool slightly for easier handling.
- In a food processor, combine the cooled lentils, tahini, olive oil, lemon juice, minced garlic, cumin, and salt. Blend until the mixture is smooth and creamy.
- Taste and adjust the seasoning if necessary. Transfer to a serving bowl, drizzle with olive oil, and sprinkle paprika and chopped parsley on top.
Notes
Adjust the garlic content based on your preference; it complements the dip beautifully.
