Description

A nutritious and delightful cookie combining cooked quinoa and rolled oats, perfect for breakfast or a snack.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup chocolate chips or dried fruit
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cooked quinoa, rolled oats, nut butter, honey or maple syrup, chocolate chips or dried fruit, vanilla extract, baking powder, cinnamon, and a pinch of salt.
  3. Mix well until all ingredients are combined thoroughly. Scoop out tablespoon-sized portions of the mixture and place them on the prepared baking sheet, flattening them slightly with the back of your spoon.
  4. Bake for 15-20 minutes, or until golden brown and fragrant. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze them for up to three months.
