Description

Quick Christmas Cranberry Meatballs are the ideal appetizer or main dish for the holiday season, combining savory beef with a sweet and tangy cranberry sauce.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup cranberry sauce
  • 1/4 cup brown sugar
  • 2 tbsp soy sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, egg, salt, and pepper. Mix until just combined.
  3. Form the mixture into small meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper. In a separate bowl, mix the cranberry sauce, brown sugar, and soy sauce until smooth. Pour this sauce over the meatballs.
  5. Bake for 25-30 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F (74°C).
  6. Serve warm, garnished with extra cranberries if desired.

Notes

For moist meatballs, don’t skip the breadcrumbs. You can use pre-made cranberry sauce if short on time.
