Quick Christmas Cranberry Meatballs are the ideal appetizer or main dish for the holiday season, combining savory beef with a sweet and tangy cranberry sauce.

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup chopped onion
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup cranberry sauce
- 1/4 cup brown sugar
- 2 tbsp soy sauce
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground beef, breadcrumbs, chopped onion, egg, salt, and pepper. Mix until just combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Place the meatballs on a baking sheet lined with parchment paper. In a separate bowl, mix the cranberry sauce, brown sugar, and soy sauce until smooth. Pour this sauce over the meatballs.
- Bake for 25-30 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F (74°C).
- Serve warm, garnished with extra cranberries if desired.
Notes
For moist meatballs, don’t skip the breadcrumbs. You can use pre-made cranberry sauce if short on time.
