Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) crushed tomatoes
  • 2 cups pumpkin puree
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Pasta of choice
  • Grated Parmesan cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion, garlic, diced carrot, and diced celery. Sauté until softened, about 5-7 minutes.
  2. Stir in the crushed tomatoes and pumpkin puree. Add oregano, basil, salt, and pepper. Mix well and let it come to a gentle simmer. Simmer for about 20-25 minutes until thickened.
  3. While the sauce simmers, cook your pasta according to package instructions in a pot of salted boiling water. Drain and set aside.
  4. Serve the creamy pumpkin Bolognese sauce over cooked pasta. Garnish with grated Parmesan cheese if desired.
