- 1 scoop (approx. 30g) Chocolate Protein Powder (Whey or Casein blend works best)
- 1/2 cup Non-fat Plain Greek Yogurt
- 1 tablespoon Unsweetened Cocoa Powder
- 1 tablespoon Sugar-free Maple Syrup or Honey
- 2 tablespoons Mini Dark Chocolate Chips
- 1/2 cup Mini Marshmallows
- Low-fat Graham Crackers or Apple Slices for dipping
Instructions
- In a medium mixing bowl, combine the chocolate protein powder, Greek yogurt, cocoa powder, and syrup. Stir vigorously until the mixture is smooth and no clumps of protein powder remain. If the mixture is too thick, you can add a teaspoon of almond milk to reach a pudding-like consistency.
- Transfer the protein mixture into a small (5 or 6-inch) oven-safe cast iron skillet or a small ceramic ramekin. Use a spatula to spread the mixture evenly across the bottom of the dish.
- Sprinkle the mini chocolate chips evenly over the protein base. Follow this by layering the mini marshmallows on top until the entire surface is covered. Press them down slightly so they stick to the chocolate layer.
- Turn your oven to the broiler setting on high. Place the skillet on the top rack, about 4-5 inches away from the heat source. Watch it closely! Broil for 1 to 2 minutes, or until the marshmallows are puffed and golden brown. Remove carefully with an oven mitt.
