- 1 cup pumpkin puree
- 1/2 cup protein powder
- 1/2 cup sugar or sweetener of choice
- 1/4 cup vegetable oil or applesauce
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the pumpkin puree, protein powder, sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Combine the baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
- Add the dry mixture to the wet ingredients gradually, stirring until just combined.
- Fold in the chocolate chips gently.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
