Ingredients

Scale
  • 1 cup frozen pineapple chunks
  • 1 scoop vanilla protein powder (whey or plant-based)
  • 1/2 cup light coconut milk (canned or from a carton)
  • 1/4 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • 1 tablespoon unsweetened shredded coconut
  • 1/2 cup cold water or ice (adjust for desired thickness)
  • Optional: A squeeze of lime juice for brightness

Instructions

  1. Prepare the Base: Place the frozen pineapple chunks and the shredded coconut into the bottom of your blender pitcher. Using frozen fruit is essential because it creates a thick, frosty texture without needing too much ice, which can water down the flavor.
  2. Add Protein and Liquids: Add the scoop of vanilla protein powder, the Greek yogurt, and the coconut milk on top of the fruit. Pouring the liquid over the powder helps prevent the protein from sticking to the sides or bottom of the blender during the mixing process.
  3. Blend to Perfection: Secure the lid tightly and start blending on a low speed, gradually increasing to high. Blend for about 45 to 60 seconds until the mixture is completely smooth and no chunks of pineapple remain. If the smoothie is too thick, add a splash of water; if it is too thin, add a few ice cubes and blend again.
  4. Taste and Adjust: Give your smoothie a quick taste. If you want more tropical tang, add a tiny squeeze of lime juice. If you prefer it sweeter, you can add a drop of honey or stevia, though the pineapple usually provides plenty of natural sweetness.
