- 1 cup protein powder
- 1/2 cup oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup shredded coconut
- 1/2 cup chocolate chips or nuts (optional)
- 1/4 cup milk or dairy-free alternative
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the protein powder, oats, almond butter, honey (or maple syrup), shredded coconut, and a pinch of salt in a large bowl.
- Add in the milk and vanilla extract to your dry mix, and mix until everything is well combined.
- Fold in the chocolate chips or nuts if using.
- Scoop the dough onto a baking sheet lined with parchment paper, about 2 tablespoons for each cookie.
- Flatten each cookie slightly with your fingers.
- Bake for about 10-12 minutes or until the edges turn golden brown.
- Allow to cool before serving.
Notes
Store leftovers in an airtight container for up to a week or freeze for up to 3 months. Don’t skip the cooling step to allow cookies to set properly.
