Description

Delightful and nutritious, these salad cups combine the creamy goodness of cheesecake with refreshing fruity flavors, all packaged in lettuce leaves.

Ingredients

Scale
  • 1 cup Greek yogurt
  • 1/2 cup cream cheese, softened
  • 1/4 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup diced fresh pineapple
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (optional)
  • Lettuce or salad greens for serving

Instructions

  1. In a mixing bowl, combine Greek yogurt, cream cheese, protein powder, honey, and vanilla extract. Mix until smooth.
  2. Gently fold in diced pineapple and shredded coconut. Use a spatula to combine these ingredients carefully.
  3. Spoon the mixture into salad cups made of lettuce or greens.
  4. Top with chopped nuts if desired and serve immediately.

Notes
