Delicious High-Protein Breakfast Burritos filled with eggs, cottage cheese, and vegetables for a nutritious start to your day.


Ingredients

  • 4 large eggs
  • 1/2 cup low-fat cottage cheese
  • 1/2 cup cooked black beans
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup spinach or kale
  • 4 whole wheat tortillas
  • Salt and pepper to taste
  • Cooking spray or a little olive oil

Instructions

  1. In a mixing bowl, whisk together eggs and cottage cheese until smooth.
  2. In a skillet, heat a little cooking spray or olive oil over medium heat. Add diced onions and bell peppers, cooking until softened.
  3. Add black beans and spinach to the skillet and cook until spinach wilts.
  4. Pour in the egg mixture and cook, stirring gently until eggs are fully cooked. Season with salt and pepper.
  5. Spoon the egg mixture into the center of each tortilla, fold the sides in, and roll it up.
  6. Serve immediately, or wrap in foil and refrigerate for meal prep.
