A delightful and nutritious treat combining the creamy texture of cottage cheese and the vibrant flavor of blackberries, perfect for a guilt-free dessert.


Ingredients

  • 1 cup cottage cheese
  • 1 cup blackberries (fresh or frozen)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup protein powder (optional)
  • 1 tablespoon lemon juice

Instructions

  1. In a blender, combine the cottage cheese, blackberries, honey or maple syrup, vanilla extract, protein powder (if using), and lemon juice.
  2. Blend until smooth, making sure there are no lumps left from the cottage cheese.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a creamy consistency.
  4. If you don’t have an ice cream maker, pour the mixture into a freezer-safe container. Freeze for about 240 minutes, stirring every 30 minutes until the desired consistency is achieved.
  5. Serve the blackberry protein ice cream in bowls or cones, and enjoy!

Notes

For a smoother texture, blend thoroughly until there’s no lumps. You can substitute Greek yogurt for cottage cheese if preferred.
