Description

A delicious and nutritious twist on a classic breakfast favorite with ripe peaches and a crunchy crumble topping.


Ingredients

  • 4 slices of whole grain bread
  • 2 ripe peaches, diced
  • 1 cup of egg whites or protein powder equivalent
  • 1/2 cup of milk (or almond milk)
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of vanilla extract
  • 1/4 cup of oats
  • 1/4 cup of brown sugar or coconut sugar
  • 1 tablespoon of butter or coconut oil
  • Maple syrup for serving (optional)

Instructions

  1. Preheat a skillet over medium heat and grease it with butter or coconut oil.
  2. In a bowl, whisk together the egg whites (or protein powder), milk, cinnamon, and vanilla extract until well combined.
  3. Dip each slice of whole grain bread into the egg mixture, allowing both sides to soak up the mixture.
  4. Place the soaked bread slices onto the preheated skillet and cook for about 2-3 minutes on each side.
  5. In a small bowl, combine the diced peaches, oats, and brown sugar to create the topping.
  6. Once the French toast is cooked, generously top each slice with the peach crumble mixture.
  7. Serve the French toast hot, drizzled with maple syrup if desired.

Notes

Use day-old bread for better absorption. You can substitute peaches with other fruits or use flaxseed egg for a vegan version.
