Ingredients

- 4 slices of whole grain bread
- 2 ripe peaches, diced
- 1 cup of egg whites or protein powder equivalent
- 1/2 cup of milk (or almond milk)
- 1 teaspoon of cinnamon
- 1/2 teaspoon of vanilla extract
- 1/4 cup of oats
- 1/4 cup of brown sugar or coconut sugar
- 1 tablespoon of butter or coconut oil
- Maple syrup for serving (optional)
Instructions
- Preheat a skillet over medium heat and grease it with butter or coconut oil.
- In a bowl, whisk together the egg whites (or protein powder), milk, cinnamon, and vanilla extract until well combined.
- Dip each slice of whole grain bread into the egg mixture, allowing both sides to soak up the mixture.
- Place the soaked bread slices onto the preheated skillet and cook for about 2-3 minutes on each side.
- In a small bowl, combine the diced peaches, oats, and brown sugar to create the topping.
- Once the French toast is cooked, generously top each slice with the peach crumble mixture.
- Serve the French toast hot, drizzled with maple syrup if desired.
Notes
Use day-old bread for better absorption. You can substitute peaches with other fruits or use flaxseed egg for a vegan version.
