- 1 cup almond flour
- 1/2 cup protein powder
- 1/4 cup melted coconut oil
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Blackberry jam for filling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine almond flour, protein powder, coconut oil, honey or maple syrup, vanilla extract, and salt in a mixing bowl until a dough forms.
- Scoop tablespoon-sized portions of the dough and roll them into balls, placing them on the prepared baking sheet.
- Make an indentation in the center of each cookie ball with your thumb and fill with blackberry jam.
- Bake in the preheated oven for 10-12 minutes or until edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months.
