Ingredients
Scale
- 1 cup non-fat Greek yogurt (plain or vanilla)
- 1/2 scoop vanilla protein powder
- 1 medium banana, peeled and sliced lengthwise
- 1/4 cup fresh strawberries, sliced
- 1/4 cup pineapple chunks (fresh or canned in juice)
- 1 tablespoon chopped walnuts or peanuts
- 1 teaspoon mini dark chocolate chips
- 1 maraschino cherry
Instructions
- In a small mixing bowl, combine the Greek yogurt and the vanilla protein powder. Stir vigorously with a spoon or small whisk until the powder is fully incorporated and the mixture is smooth and creamy. If the mixture feels too thick, you can add a teaspoon of almond milk to thin it out.
- Peel your banana and carefully slice it in half lengthwise. Slice your fresh strawberries into rounds and ensure your pineapple chunks are drained of any excess liquid.
- Place the two banana halves on opposite sides of a shallow bowl or a traditional long dessert dish. This creates the “boat” that will hold your yogurt and toppings.
- Spoon the protein yogurt mixture into the center of the bowl, nestled between the two banana halves. For the best visual effect, try to dollop the yogurt in three distinct mounds to mimic the look of ice cream scoops.
- Top the yogurt scoops with the strawberries and pineapple. Sprinkle the chopped nuts and chocolate chips over the entire bowl. Finally, place the maraschino cherry right in the center and serve immediately.
- Cook Time: 5 minutes
