- 1 can (20 oz) sliced pineapple in syrup

- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the unsalted butter in a round cake pan over low heat, then sprinkle brown sugar over the bottom.
- Arrange the sliced pineapple over the brown sugar mixture and place a Maraschino cherry in the center of each pineapple slice.
- In a bowl, whisk together all-purpose flour, baking powder, and salt.
- In another bowl, beat the eggs and mix in the granulated sugar, milk, vegetable oil, and vanilla extract.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Pour the batter over the arranged pineapples and cherries, then bake for 35-40 minutes or until a toothpick comes out clean.
- Allow the cake to cool for about 5 minutes before inverting it onto a serving plate.
